This recipe is for a 9 x 5 x 3 inch meatloaf pan. You can adjust the amount of ground beef depending on the size of your pan. Use 1 egg per pound of meat. The black pepper, Parmesan cheese, garlic and onion greens are optional.
3 pounds ground beef or any ruminant
3 eggs, or 1 egg per pound of meat
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup Parmesan cheese
1 clove garlic, chopped
3 onion greens (the green part of the onion), chopped
Bacon or fat fries (raw) for a browned topping
Put the oven rack at a high enough level so the loaf top will be close to the broiler. You are going to use the broiler at the end of cooking.
Place all ingredients except the bacon/fat fries into a large bowl. Stir moderately with a large spoon, or use your hands. Press gently into a meatloaf pan. Place bacon strips on top of meatloaf, or optionally, slice fat fries into very thin slices, and sprinkle across the top of the meatloaf.
Bake in preheated 375° oven for 1 hour. Turn the oven to “broil” making sure to leave the door open. The bacon or fat fries will get brown in 3-5 minutes. Remove the meatloaf from the oven, and allow to sit for 5 minutes. Slice and serve.
